1 (16 oz.) can tomat o es

1 sm. can black olives

1 zucchini, sliced

1 summer squash, sl i ced

1 green pe pper, sliced

Handful of fresh green beans

1 med. onion, cut in wedges

1/2 tsp. o r egano

1/4 tsp. basil Salt and pepper Garlic powder

Mozzarella cheese, shredded

 

 

Season ch i cken wi t h salt, pepper and g a rlic powder.   Brown chi c ken in large frying pan.   Cover wi t h tomatoes.   Cover p an and simmer 20 minutes.   Add fresh vegetables and top with oregano and basil - cover pan and continue to simmer for 20 minutes.   Add black olives and cover with Mozzarella cheese. Continue t o simmer until cheese is melted.   Serve over white ri c e .

CHICKEN AND WI L D RICE

 

 

 

 

 

1 (6 oz.) pkg. Uncle Ben's wild rice

(original)

1 can cre a m of chic k e n soup

1 can cre a m of ce l e r y soup

1 can mushrooms

1 whole ch i cken, cut u p

1 pkg. Lipton's onion soup mix

 

 

Butter a 13 x 9 inch pan.   Mix t ogether rice, soup and mushro o ms and sp re ad

in bottom of pan.   Pl a ce c h icken pieces on top of rice mixture and sprinkle

with onion soup mix.   Cover with foil and bake at 350 degrees for about 1 1/2

hours. Se r ves 4-5.
