6 chic k en breasts, boned and skinned

1 c. unsweetened ap p le jui c e

1/4 tsp. g r ound ginger

1 tbsp. cornstarch

2 c. unpared red apples, chopped

2 stalks celery, sliced

3 tbsp. raisins

1 tbsp. sli c ed green o nion

1 tbsp. le m on juice

1/4 tsp. salt, opt.

 

 

Place ch i c k e n, 1/2 cup apple jui c e, and lemon juice, s alt and pepper in n o n stick skillet.   Heat to boiling, c o ver and simmer for 20 minutes or until chicken is tender and done.   Remove chicken.   Mix remaining apple juice a nd

cornstarch.   Stirring constantly.   Add remaining ingredients.   Arrange chicken on plate.   T o p with sauce.
