3 tsp. curry powder

1 tsp. salt

1/4 tsp. black pepper

1/4 tsp. crushed red pepper

2 tsp. sugar

1 1/2 c. w a ter

1/2 of an onion, diced

 

 

Optional:   1 teaspoon of lemon grass p o wder or fre s h lemon g r ass chop into fine p i ece s .   Lemon g r ass can only be p u rchased at an oriental food store. Put water in a pan big enough to hold all ingredients.   Add all s p ices.   Stir until mixed.   Add chicken a n d o nion.   Cook on high until boiling, then lower temperature to medium.   Stir well, then cover.   Cook (covered) until sauce has thickened and chicken is well-cooked (approximately 30-40 minutes).

Stir every 10 minutes so chicken is c o ated evenly wi t h the sauce.   More water can be added if a t h inner sauce is desired.   Serve with steamed rice.

1/2 c. tomato sauce

1 c. rice

1/4 c. butter

Grated Romano or Parmesan cheese
